Chill-Akil was born in 2015 in the Centro Histórico of Mérida with a simple idea: take the chilaquile (a Sunday family dish) and reinvent it with ingredients from the Yucatán Peninsula. Cochinita Pibil, plantain, edam cheese, mild habanero sauce. It's not food from Yucatán; it's food made in Yucatán.
Today we run three locations in the city (Centro, Plaza Luxury in Montebello, and Plaza Pericenter in Caucel) serving chilaquiles to families, travelers and locals who come for breakfast and stay for lunch.
Three openings, one story.
Abrimos la primera sucursal en el Centro Histórico de Mérida con una idea sencilla: tomar los chilaquiles (un plato de domingo familiar) y reinventarlos con ingredientes de la Península de Yucatán.
The second location opened at Plaza Luxury, Montebello. More space, more tables, the same chilaquiles. The brand started moving beyond downtown into the familias del norte de Mérida.
The third location at Plaza Pericenter, in the west. A neighborhood spot for people living in Caucel, Las Américas, Cordemex and the residential west zone del periférico.
We were born in Mérida in 2015. We took chilaquiles (a Mexican family dish) and reinvented them with ingredients from the Peninsula: cochinita pibil, fried plantain, edam cheese, mild habanero salsa. It isn't food from Yucatán; it's food born of Yucatán.
The same menu, the same recipes, the same care across all three locations. Our suppliers have been with us since day one. Consistency isn't a slogan · it's how we open every morning.
Our teams are from Mérida. Our guests come back · and bring their families. Over 500 Google reviews and a 4.5-star average remind us that flavor matters · but how the table feels matters more.
More than 500 Google reviews with an average of 4.5 stars across our three locations. Warm service, young atmosphere, curated music · and the chilaquiles that got us here.
